Brain Food: Snacks to Get Through the Workday
I try to pack my lunch as much as possible because not only does it help my wallet, but many times it’s healthier than eating out or buying lunch. While I’m good about bringing lunch, I usually get a mid-afternoon craving that I didn’t anticipate.
I’m writing this blog as I’ve hit my mid-day hunger craving, so I was inspired to look into some quick, tasty recipe options for snacks to give me my second wind to finish out the workday.
Listed below are my top picks from the options I found. I like them because they look as simple as they are tasty. If you know of any good ones I missed, comment below with the recipes. I always love to try new things!
Roast Beef and Horseradish Cream on Apple Slices
The recipe actually called for a pear, but I like apples better. Create the horseradish cream with 1 tablespoon of low-fat sour cream and 1 teaspoon of prepared horseradish, adding in pinches of salt and pepper.
Vegetable Chips with Curried Yogurt Dip
This recipe specifically calls for beet chips, but I think any vegetable chip would work. The dip is super simple, too. Mix together 2 tablespoons of plain low-fat Greek yogurt and a quarter teaspoon of curry power. I’m sure other spices would complement this well, too, so get creative.
Banana and Chocolate-Hazelnut Spread on Crackers
This is pretty self-explanatory and sounds as tasty as it is simple. I’m thinking peanut butter would be a good addition to this, too.
Lemon-Avocado Dip with Endive Leaves
Think chunky, lemony guacamole with a pinch of salt and no calorie guilt because you are using endive leaves instead of tortilla chips.
Frozen Yogurt with Blueberries and Cardamom
A sweet treat! Combine half of a cup of frozen vanilla yogurt and half of a cup of blueberries in a bowl and sprinkle with a pinch of cardamom.
